TURKEY BREAST FILLET WITH LEEK
CREAM SAUCE
 
1 to 1 1/2 lbs. leeks
1 to 1 1/2 lbs. turkey breast fillet
1 1/2 to 2 c. chicken stock
1/2 to 1 c. sweet or sour cream
4 tbsp. soy sauce
2 tsp. curry powder

Cut turkey breast fillet into half inch strips and brown in 2-3 tablespoons of vegetable oil. Cut washed leek into rings, add, and cook briefly. Season with soy sauce and curry powder; then add chicken stock and let cook for another 5-10 minutes. Finally, add cream. Serve over rice. Makes 4 servings.

This is such a good recipe and so easy. Here are a few changes I made -- substituted teriyaki sauce for soy sauce since I had no soy sauce in the house -- and cut the sour cream so it was one-half sour cream and one-half two percent greek yogurt. Lastly, I thickened the sauce with a little cornstarch so it clung to the rice beautifully. I will definitely make this again and again. Next time, I may liven the color up a bit by adding some red bell pepper.
