TURKEY BREAST WITH SOUR CREAM SAUCE | |
Preparation time: 25 minutes. Baking time: about 1 hour and 15 minutes. Oven temperature: 350 degrees. Serves: 4. Calories: 497 each. 1/2 turkey breast, 1 1/2 to 2 lbs. 2 tbsp. butter, melted 1/2 tsp. freshly ground black pepper or ground Chinese-style pepper 3/4 c. water 1 tsp. instant minced onion 1 cna (4 1/2 oz.) deviled ham 1 c. sour cream 1 tsp. Dijon-style mustard Chopped parsley, for garnish 1. Remove bone from turkey but not the skin. Brush turkey with melted butter. Place turkey skin side up in shallow roasting pan. Insert thermometer into thickest part of meat. 2. Sprinkle turkey with pepper. Pour water around turkey in pan and sprinkle with minced onion. 3. Bake at 350 degrees about 50 minutes or until turkey is done and tender and thermometer registers 180 degrees. 4. Remove turkey onto platter. Pour juices into skillet. Heat to boiling and whisking constantly, simmer until liquid is reduced to about 1/2 cup. 5. Whisk in the ham, sour cream and mustard. Spoon over turkey and return to baking pan. Bake 15 minutes longer or until sauce is "set". 6. Sprinkle with parsley and slice thinly to serve. Good served with: Boil potatoes in their jackets, broccoli, green salad. TIPS: You may substitute a whole chicken for the turkey, using the sam baking method and approximate cooking time. Spread sauce over whole chicken, or first carve chicken into serving pieces and spread sauce over, before returning to oven to "set" sauce. HEALTH NOTE: To reduce fat, cholesterol and calories, substitute light dairy sour cream or blended lowfat cottage cheese for the sour cream. |
