SOUTHERN CASSEROLE 
1 lb. ground beef
2 eggs, beaten
1 c. corn meal
1 can cream style corn
1 c. milk
1/4 c. oil
2 c. shredded cheddar cheese
1 lg. onion, chopped
2 jalapeno peppers, chopped

Brown the ground beef in a cast iron skillet (if available) or any other skillet. Drain the grease off; remove meat from skillet. Stir the eggs, cornmeal, corn, milk and oil together. Pour half the mixture into the skillet; top with the ground beef, cheese, onion, and pepper.

Pour remaining mixture over the top. Bake in 350 degree oven for 45- 50 minutes. Let stand 5-10 minutes, then cut into pie-shaped pieces. Garnish and serve.
