SALMON CROQUETTE 
1 can salmon (lg.)
1/2 c. mashed potato
1 egg
1/2 tsp. onion
1/2 tsp. green pepper
Cornmeal or ground crackers

Combine all above ingredients. Shape into patties, coat with cornmeal or cracker crumbs. Fry until golden brown. Use all vegetable oil for best results, 3/4 cup oil in heavy skillet. Preheat to 375 degrees.
