SALMON CROQUETTE 
Serves 4.

2 c. salmon, well drained
2 c. mashed potatoes
1/2 tsp. salt
1/8 tsp. pepper
1 egg, beaten
1 tbsp. chopped parsley
1 tsp. Worcestershire sauce
1 tsp. lemon juice
Fresh bread crumbs

Lightly mix all ingredients together. If too moist, add bread crumbs or chill in refrigerator, mold into patties and coat with fresh bread crumbs. Fry in oil from 2 to 4 minutes. Serve immediately with cheese sauce or sauce of your choice. Makes 3 to 4 servings.
