SALMON CROQUETTS 
1 egg
1 c. mashed potatoes
1 (15 oz.) can salmon, drained
1 tbsp. bell pepper flakes
1 tsp. parsley
1 tbsp. lemon juice
1 tsp. grated onion
1/4 tsp. salt
Dash cayenne pepper
1/3 c. dry bread crumbs
2 eggs, slightly beaten
1 1/2 c. crushed potato chips or seasoned bread crumbs

Mix first 11 ingredients; adding enough bread crumbs that mixture may be handled. Shape into patties, dip into beaten eggs and then crushed chips. Chill at least 1 hour. Then fry in deep fat (375 degrees) for 5 minutes or on preheated microwave browning dish for 3 minutes. Serve with cocktail sauce or catsup.

Since microwave ovens vary in power, you may need to adjust your cooking time.
