SALMON CROQUETTES 
1 lg. can salmon, pink
2 med. eggs
2 c. bread crumbs
Dash salt and pepper
1 c. finely chopped onions

Remove all dark skin from salmon. Wash up salmon. Beat eggs well. Add to salmon, bread crumbs. Add dash of salt and pepper. Add onions. Mix well. Make medium balls. Fry in oil. Serves 6 to 8 people.
