SALMON CROQUETTES 
2 tbsp. butter
3 tbsp. cornstarch
3/4 tsp. salt (opt.)
1/4 tsp. pepper
1 c. milk
3 c. flaked salmon, cooked or canned
1 1/2 tbsp. chopped parsley
1 tsp. lemon juice
1/2 tsp. grated onion
Italian bread crumbs
1 egg

Melt butter in saucepan and blend in cornstarch, salt, pepper. Remove from heat and gradually add milk, mixing until smooth. Cook over medium heat until it thickens and comes to a boil for 1 minute. Stir in remaining ingredients and chill. Shape into patties and roll in Italian bread crumbs, then in a slightly beaten egg, then in crumbs again. Pan or deep fry in oil until golden brown. 4 to 6 servings. Three cups ground beef can be substituted for fish.
