SALMON CROQUETTES 
1 c. hot mashed potatoes
1 c. flaked salmon

Add potatoes to salmon. Season with salt and pepper and lemon juice. Shape into cutlets, dip in beaten egg, then roll in crumbs. Fry in deep fat (375 to 390 degrees) for 2 to 5 minutes or maybe a little longer.

I generally use 2 cans of salmon - one can Red Sockeye and one can pink. Mix together. If 2 cans used, add 2 cups hot mashed potatoes, 1 more egg and more crumbs and 2 teaspoons lemon juice. I've used instant potatoes when pressed for time.
