SMOKED SALMON CHOWDER | |
3 tbsp. butter 1/2 c. chopped onion 5 oz. salmon 1 tsp. minced garlic 3 tbsp. flour 14 oz. chicken broth 1/2 c. carrots 1/2 c. celery 1 c. potatoes 2 c. half & half or canned skim milk Melt butter and saute onion, garlic, and 1/2 salmon until onion is tender. Add flour and cook 1 minute. Stir in broth and chopped vegetables and cook 4 minutes. Keep stirring. Cover and cook slowly 20 minutes. Stir in half & half and remaining flaked salmon; correct seasoning. If you do not have smoked salmon, try putting a little liquid smoke on salmon. |
