TWICE BAKED POTATOES 
4 baking potatoes
3 green onions, thinly sliced
2 tbsp. butter
1/2 c. milk, hot
1/2 tsp. salt
Dash pepper, nutmeg, paprika
4 slices bacon
2 tbsp. Parmesan cheese
2 tbsp. grated sharp Cheddar cheese

1. Bake potatoes, 400 degrees, 1 hour.

2. Cut a thin slice from top of each potato, scoop out pulp into a bowl. Mash with milk until fluffy. Beat in butter and onion. Add seasonings. Cook bacon, crumble; add to potato mixture.

3. Spoon into shells. Sprinkle with cheese. Bake 375 degrees, 15 minutes.
