TWICE BAKED POTATOES 
6 lg. baking potatoes
1 lg. pkg. (8 oz.) cream cheese
1 c. milk
2 tbsp. butter
Slice of American cheese or Velveeta cheese

Wash the potatoes and bake in conventional oven or microwave. After baking, slice the top off potatoes. Scoop potato into large mixing bowl. Cream together potatoes, cream cheese, milk and butter with electric mixer. Season with salt and pepper. Fill the scooped out skins with potato mixture. Cover the top of each with 1 slice of either American or Velveeta cheese. Bake at 350 degrees for 15-20 minutes or until cheese is slightly melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
