TWICE BAKED POTATOES 
5 or 6 med. baking potatoes
4 tbsp. butter
4 oz. cream cheese
2/3 c. sour cream
1/4 to 1/3 c. milk
1 tbsp. dry minced onion
Salt & pepper to taste
Shredded cheese & parsley

Bake potatoes. Remove from oven and cut potatoes in half. Scoop out insides; save shells. In a medium bowl, mix potatoes, butter, cream cheese, sour cream, milk, onion and salt and pepper. Beat until smooth. Spoon mixture back into shells. Place on cookie sheet. Sprinkle cheese and parsley on top of potatoes. At this point you can

1. Bake in 350 degree oven for 5 to 10 minutes until cheese is melted or

2. Refrigerate until meal. Bake until warm, approximately 15 minutes.
