TWICE BAKED POTATOES 
6 lg. baked potatoes, hot
3-4 tbsp. butter
1/2 c. milk
1 tsp. onion powder
1 tsp. salt
1/2 tsp. white pepper
2 egg whites
1/2 c. Swiss or Cheddar cheese, grated
Paprika

Cut potato in half - scoop out potato pulp - add butter, milk, onion powder, salt, pepper - beat with electric mixer until smooth - set aside - beat egg whites until stiff - fold in potato mixture. Preheat oven to 400 degrees. Fill potato shells - sprinkle with cheese and paprika. Bake 10 minutes.
