ANNAMARIE'S CARROT CAKE 
CAKE:

1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2/3 c. salad oil
3 eggs
1 tsp. vanilla
1 c. shredded carrots
1/2 c. crushed pineapple
1/2 c. nuts (walnuts)

CREAM CHEESE ICING:

1 (3 oz.) pkg. cream cheese
1 tbsp. butter
1 tsp. vanilla
2 c. confectioners' sugar
1/2 c. nuts (optional)

Sift dry ingredients together in large bowl. Add oil, eggs, vanilla, carrots, pineapple and nuts. Mix until moist. Bake in 9"x9" or 8"x8" greased and floured pan. Bake at 350 degrees for 35 minutes. Cool 10 minutes and remove.

ICING: Combine cream cheese, butter, and vanilla. Add sugar; beat together. Stir in nuts last.
