BARRIE'S CARROT CAKE 
2 c. sifted flour
2 c. sugar
3 tsp. baking soda
1 tbsp. cinnamon
2 tsp. baking powder
2 tbsp. Grand Marnier or brandy
3 c. grated carrots
4 eggs
1 1/2 c. salad oil
1 c. walnuts
1 c. shredded coconut
1 c. drained, crushed pineapple

Mix dry ingredients together. Add Grand Marnier or brandy. Process remaining ingredients in food processor. Add to the dry ingredients. Bake 1 hour at 350 degrees in greased 9 x 13 inch pan. Cool, then frost.

FROSTING:

1/2 c. butter
1 lb. box confectioners' sugar
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla

Mix until smooth.
