CARROT CAKE | |
2 c. flour 1 1/2 c. salad oil 2 tsp. baking powder 4 eggs 1 1/2 tsp. baking soda 1/2 c. nuts 1 1/2 tsp. salt 2 c. grated carrots 2 tsp. cinnamon 1 c. coconut 2 c. sugar 8 1/2 oz. can crushed pineapple (do not drain) Sift dry ingredients. Add remaining ingredients in order given, beating after each addition. Pour into 2 greased cake pans and bake 35-40 minutes at 350 degrees. FROSTING: 8 oz. cream cheese 1 stick butter (1/2 c.) 1 box powdered sugar Mix together, adding milk if necessary for spreading. |
