GRANDMA'S CARROT CAKE 
3 c. flour
2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 c. grated carrots
1 c. chopped pecans or black walnuts
1 1/2 c. salad oil
3 eggs (4 if small)
1 tsp. vanilla
1 c. chopped apples
1 c. crushed, well drained pineapple

Roll the nuts in a little of the flour. Sift the rest of the flour with the sugar, baking powder, soda and salt. Beat the eggs and add them to the oil, then add to egg oil mixture the carrots, nuts, vanilla, apples and pineapple. Gradually add the dry ingredients to the wet ingredients stirring well.

Pour into greased and floured 10 inch tube pan. Bake 1 hour at 350 degrees.
