CUCUMBER SOUP | |
2 med. cucumbers 1 qt. buttermilk 1 tbsp. snipped green onion 1 tsp. salt 1/4 c. parsley Pare cucumbers, remove seeds and grate to make 1-1 1/2 cups. Add remaining ingredients; mix well. Cover and chill about 4 hours. Mix again just before serving. Trim with parsley sprigs. Serves 8-10. |
