ED'S "OLD BAY" DEEP FRIED
CHICKEN WINGS
 
Great for sports parties, or whenever!

whole chicken wings
Old Bay seasoning
cayenne pepper
black pepper
salt
deep fryer with strainer (basket)
fresh and clean vegetable oil

With clean oil in your deep fryer, set the temperature to 350°F while you prepare the wings.

For each whole chicken wing, cut them into sections at the joints (there should be two sections and a tip).

Cooks Note: Collect the tips together in a Ziploc and freeze for use later in chicken broth.

Optional: Rinse the wing pieces. Use a paper towel to dab up any excess water from the wings so it doesn't spatter when it hits the oil.

Lay wings out on flat surface and sprinkle them with salt, black pepper, cayenne pepper and Old bay seasoning to your preference.

In a 6-quart deep fryer at 350°F place 16 to 20 wings in the strainer at one time, and slowly lower the strainer into the oil. If the oil starts to rise quickly then carefully lift up on the strainer and the oil should begin to drop. The wings should be fried for 20 to 25 minutes depending on how crispy you like it, but no less than 15 minutes.

After frying is complete, pull the strainer up to drain hot oil. Then using tongs place wings on a plate and re-sprinkle them with the above seasonings. Let cool for a few minutes and enjoy!

Caution: oil will still be hot after frying is complete.
