CHERRY MUFFINS 
2 c. flour
1 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 eggs, beaten
1/2 c. vegetable oil
1/2 c. buttermilk
1/2 c. cherry jam (can use strawberry)

In mixing bowl, stir together flour, sugar, soda, cinnamon, nutmeg and salt. Make a well in the center. Combine eggs, oil and buttermilk. Pour in all at once into well. Stir just until dry ingredients are moistened. Do not over- mix. Gently fold in jam (a few lumps will remain). Place in well-greased or paper lined muffin tins. Bake at 375 degrees for 20 minutes. Makes 18.
