DRIED CHERRY ORANGE MUFFINS | |
1 c. plus 1 tbsp. sugar, divided 1/2 c. unsalted butter 1 orange 2 eggs 2 c. flour 1 tsp. baking soda 1 c. buttermilk 1 c. dried cherries (Michigan) Cream 1 cup sugar and butter until smooth. Grate orange peel into 1 1/2 tablespoons. Cut orange in half and squeeze. Strain and set aside. Discard pulp. Add eggs and grated orange rind to sugar mixture. Beat until fluffy. Put flour, soda, and salt in bowl. Add to creamed mixture with buttermilk. Add cherries and stir until mixed. Put in muffin pans lined with paper. Bake 20 minutes in 400 degree oven. Brush with orange juice. Sprinkle with 1 tablespoon sugar while still warm. |
