CRISPY ONION RINGS 
3 med. Vidalia onions
3 c. buttermilk
1 c. flour
2/3 c. water
1 egg, beaten
1 tbsp. oil
1 tsp. lemon juice
1/4 tsp. cayenne pepper
Oil for frying

Peel and slice onions 1/3 inch thick. Separate into rings. Soak in buttermilk 30 minutes.

In a bowl combine remaining ingredients and stir. Heat oil in large skillet about 1/4 inch deep of oil. Dip rings into batter and fry until golden brown. Yields 6 to 8 servings.
