CHOCOLATE CHIP BANANA BREAD | |
2 1/2 c. all-purpose flour 1 tsp. baking soda 3/4 tsp. salt 1 1/4 c. sugar 1 c. vegetable oil 3 eggs 1 1/2 c. mashed bananas (about 3 lg.) 1 c. semi-sweet chocolate chips Preheat oven to 325 degrees. Grease 4 (6x3x2) loaf pans. In medium bowl stir first 3 ingredients and set aside. In large bowl, at medium speed, beat next 3 ingredients until well blended. Add bananas and beat until well blended. At low speed, beat in flour mixture, just until blended. Stir in chocolate chips. Pour into loaf pans. Bake 45-50 minutes or until wooden toothpick (inserted in center) comes out clean. Cool in pans 10 minutes. Remove from pans. Cool on wire racks. Wrap in plastic wrap, then foil. Store overnight before serving. Slice with sharp knife. |
