ORANGE/HEARTS OF PALM SALAD 
3 tbsp. lemon juice
2 tbsp. Dijon style mustard
3 garlic cloves, mashed
salt & pepper
3/4 c. olive oil
1/4 c. thinly sliced scallions
1 bunch romaine or other greens
1 can mandarin oranges
1 can hearts of palm, sliced into 1/2 inch rounds

In a jar, combine lemon juice, mustard, garlic, salt & pepper. Add the oil in a stream, whisking until the dressing is emulsified. Stir in scallions. Arrange lettuce in bowls, sprinkle with oranges & hearts of palm. Drizzle the dressing over all.
