SUPER-STUFFED SANDWICH LOAF | |
CRUST: 3 1/4 c. all-purpose flour 1 tbsp. sugar 1 tsp. salt 1 pkg. rapid-rise yeast 1 c. hot water 1 tbsp. salad oil FILLING #1: 1 lb. sweet Italian sausage, cooked and thinly sliced 1 med. green pepper, chopped 1 med. onion, chopped 8 oz. sliced Mozzarella cheese FILLING #2: Sliced pepperoni and cheese FILLING #3: Sliced ham and Cheddar cheese FILLING #4: 6 oz. thinly sliced corned beef 1/4 lb. sliced Swiss cheese 8 oz. well-drained sauerkraut Preheat oven to 400 degrees. Combine flour, sugar, salt and yeast in a mixing bowl. Stir in oil and hot water. Turn out on floured surface and knead for 4 minutes. Roll dough to 14x10 inch rectangle. Leave 2 inches uncovered on each end, and arrange any combination of above fillings on dough. Roll as for jelly roll and place on well-greased cookie sheet or in well-greased loaf pan. Let rise in warm place until light, 30-45 minutes. Bake at 400 degrees for 35-40 minutes until lightly browned. If using Italian sausage for filling, cook sausage in microwave or oven and slice thinly. Then cook pepper and onion until tender. Proceed as above. |
