ORANGE-KIWI FRUIT SALAD 
1 head Romaine or leaf lettuce, torn
3 kiwi fruit, peeled & sliced
1 (11 oz.) can Mandarin oranges, drained
1 lg. purple onion, sliced
Dressing (use recipe that follows or Marie's Vinaigrette)
3 oz. blue cheese, crumbled fine
1/3 c. walnuts or pecans
Commercial croutons

Combine lettuce, sliced kiwi fruit, Mandarin oranges and sliced onion in a large bowl; toss gently. Pour dressing over salad; toss gently. Top salad with blue cheese, chopped walnuts and croutons. Yield: 6 servings.

DRESSING:

1/2 c. extra virgin olive oil
1/3 c. fresh lime juice
3 tbsp. red wine vinegar
3 tbsp. orange marmalade
1 tsp. salt
1 tsp. freshly ground pepper

Combine all ingredients in a jar. Cover tightly and shake vigorously. Yield: 1 1/3 cups.
