CRISP AND EASY ONION RINGS 
1 egg
Dash of milk
1/2 c. flour
1/2 c. pancake mix (any brand)
1/2 tsp. baking powder
1/2 tsp. salt

Slice onions and let stand in cold water 1 hour before frying. Beat egg and small amount of milk. Add flour and pancake mix, baking powder, salt and enough milk to make batter fairly thick. Fry in oil at 375 degrees until golden.
