PISTACHIO NUT CAKE 
1 pkg. yellow or white cake mix
1 c. club soda or 7-Up
1 box instant pistachio pudding mix
3 eggs
1/4 c. cooking oil
1/2 c. chopped walnuts (opt.)

Combine all ingredients. Green food coloring can be added for darker shade of green if desired. Beat with electric mixer and pour into buttered bundt pan. Bake in 350 degree oven for 40 to 50 minutes until done. Frost with Pistachio Frosting if desired.

PISTACHIO FROSTING:

1 box instant pistachio pudding mix
1 pt. whipping cream, unwhipped
1 c. milk
1/2 c. walnuts (if desired)

(1/2 cup coconut can also be used if desired.) Beat until consistency has that of whipped cream. Frost on cooled cake.
