MOM'S HORIZONTAL TACOS 
This is a very loose recipe that you can play with and add and subtract from easily... I am not putting exact measurements for that reason... Most of my recipes are never made the same way twice... That being said, this is how I made it and it was delicious!!

1 (15 oz.) can corn (any brand fine)
1 (15 oz.) can dark red kidney beans, drained (any brand fine)
1-2 cups leftover cooked white rice
2 hamburger patties (I use Bubba Burgers)
some frozen diced onion (I use the stuff from the freezer section)
onion and garlic powder, to taste
1 env. dry taco seasoning
1 cup water
16 oz. Mexican "fiesta" shredded cheese
dairy sour cream, to taste
shredded lettuce (I used the prepackaged bag but you could use iceberg and shred it)
salsa, to taste (your choice)
tortilla chips in a bag

Get a large deep stew pot out (best to use nonstick if you have it).

Sauté hamburger patties and bust up the meat until it is like the meat used in tacos... Cook until brown.

When the meat is almost finished cooking add onions and sauté them as well... If you add them too early they will shrivel and disappear so putting them in toward the end is best... Cook til they are clear... If too much grease you can turn off the heat and tilt the pan and dry up the grease with paper towels then resume cooking (minus paper towels... Haha).

Add some garlic powder (a few shakes... I like a lot of garlic but you may not) and some onion powder (again a few shakes, to taste) to hamburger onion mixture.

Add leftover cooked rice to hamburger mixture... Bust it up so it is not in clumps if it is still cold from the refrigerator)... Stir it all together well.

Add can of corn (drain first) to hamburger rice mixture.

Add can of beans to hamburger rice corn mixture.

Add taco seasoning pack and 1 cup water and stir mixture together till all mixed together... Let cook on medium heat for a few minutes til the water is mostly gone.

PRESENTATION:

Scatter some tortilla chips on each plate... Top with the hamburger/rice/beans/corn mixture in the middle. Surround the mixture with shredded lettuce in a circle. Top the mixture with shredded Mexican cheese. I also like to put a dollop of sour cream and salsa in the very middle...

It was delicious and tasted like tacos but without the mess... Hence horizontal tacos (since they were laying on the plate instead of standing up).

Another way to do this recipe is take soft tortilla shells and fill them with the hamburger/rice/bean/corn mixture and wrap them up and add cheese, salsa lettuce and sour cream on top... It is more bland that way however!

There are many different ways you can play with this recipe... Hope you enjoy it as much as my family did!!
