ALISHA'S CHEESY TACO LASAGNA | |
Great as leftovers!! 2 lb. ground beef 2 pkgs. taco seasoning 1 (15 oz.) can corn (do not drain) 1 (4 1/2 oz.) can green chilies (do not drain) 1/2 cup chunky salsa 2 cups cheddar jack cheese, shredded 2 cups mozzarella cheese, shredded 6 (10-inch) flour tortillas, cut into 3-inch strips Brown ground beef, drain. Add packages of taco seasoning mix - do not add water as on package!! Add to skillet corn, chilies and salsa. Mix well. Spray 9x13-inch dish with non-stick cooking spray (Pam) and line bottom with tortillas. Put 1/2 beef mixture over tortillas and cover with 1 cup cheddar jack and 1 cup mozzarella cheese. Repeat tortillas, beef and cheese one more time. Bake in 350°F oven for 25 minutes or until cheese is melted and bubbly. Serve with any favorite taco garnishes, such as dairy sour cream, tomatoes, onions, olives, lettuce, etc. Enjoy!! Submitted by: Alisha Shockley |
