NO-CRUST BROCCOLI QUICHE 
5 eggs
1/2 cup vegetable oil
2 (10 oz.) pkgs. cooked frozen chopped spinach, drained well and pressed
1 small grated onion
1/2 cup grated Parmesan
1/2 cup grated Cheddar cheese
1/2 cup Bisquick baking mix
1/2 tsp. pepper
1/4 cup parsley

Grease round pie pan. Preheat oven to 350°F.

In medium bowl, beat 5 eggs and add oil, mixing on low speed. In another medium bowl, combine remaining ingredients. Stir first mixture into spinach mixture, blending well, scraping bowl with spatula to be sure all Bisquick is well blended.

Bake at 350°F for 35 to 45 minutes.

Serves 6 to 8.
