POTATOES VESUVIN EN CASSEROLE 
4 lbs. cooked potatoes
1/3 c. soft butter
1 1/2 tsp. salt
2 whole eggs, slightly beaten
1/4 c. milk
3 egg yolks, slightly beaten
1 c. coarsely shredded cheddar cheese (1/4 lb.)
1/4 c. melted butter
1 tbsp. coffee cream
1/8 tsp. cayenne pepper
1/4 tsp. mustard
1/4 tsp. salt
Paprika

Mash and beat potatoes with 1/3 cup butter, salt, 2 eggs and milk until smooth. spread in buttered shallow casserole. Beat remaining ingredients until blended. Pour over potatoes. Sprinkle top with paprika. Bake at 400 degrees for 30 minutes or until delicately brown. Serves 8. (This may be prepared in advance and baked about 45 minutes. Serves 8.
