STRAWBERRY FREEZER JAM | |
2 pt. strawberries, washed and stemmed 1 tbsp. lemon juice 4 c. sugar 1 c. water 1 pkg. powdered pectin Prepare container or freezer jars and lids according to manufacturer's instructions. Crush strawberries. Stir in lemon juice. Stir sugar into berry mixture and let stand 20 minutes, stirring occasionally. Combine water and pectin in small saucepan. Bring to a boil and then boil for 1 minute, stirring constantly. Add to berry mixture, stirring constantly, for 2 minutes. Carefully ladle into can or freezer jars, leaving 1/2-inch of headspace. Adjust caps. Let stand at room temperature. Makes about 5 (8 ounce) jars. |
