STRAWBERRIES FLAMBE 
1 pt. strawberries, sliced
1 lemon, halved
1/2 c. butter
1/2 c. brown sugar
1/2 c. dark rum
1/2 gal. vanilla ice cream

Melt 1/4 cup butter in heavy skillet at a very low temperature, using lemon poked with fork to stir (sliced side of lemon should be face down in skillet). Stir in 1/4 cup brown sugar, mixing well. Pour in 1/4 cup rum.

Slowly increase temperature to medium low. Add half of strawberries, making sure they're covered in mixture. Allow them to "soak" in mixture for one minute.

While stirring, slowly increase temperature to medium high, until mixture rapidly boils. Boil 10 seconds - DO NOT COOK LONGER.

Immediately light match and hold over vapors emitted by mixture to burn off alcohol. Remove from heat.

Pour over bowls of ice cream. Repeat procedure using the other half of the ingredients. DO NOT attempt to prepare entire recipe at once - it will not turn out correctly. Serves 4-6.
