LE PASSIOINE FLAMBE 
1 lg. can peach halves
Vanilla ice cream
1 1/2 oz. cognac per serving

For each serving, take one peach half, put one scoop of ice cream in center. Heat on low flame 1 1/2 oz. cognac per serving. When cognac is warm, light with match in pan. Pour flaming cognac over each portion and serve.
