COUNTRY POTATO PANCAKES 
2 family large potatoes
1 tbsp. grated onions
1/2 tsp. salt
Oil to fry
1 egg, slightly beaten
1 tbsp. flour
1/4 tsp. baking powder

Finely grate potatoes drain any liquid. Add onions, eggs, flour, salt and baking powder. In a pan add oil to a depth of 1/8 inch. Heat over medium heat. Drop by heaping tablespoons in hot oil. Flatten to forms of patties. Fry until golden brown then turn and look at other side. Serve immediately. About 12 pancakes.
