QUICK PEANUT BUTTER - RAISIN
CONFECTIONS
 
3 3/4 qt.=1 #10 can & 3 1/4 c. peanut butter (8 lb. 7 oz.)
1 c. butter (8 oz.)
1 1/4 qt. nonfat dry milk (2 lb. 13 oz.)
3 3/4 c. honey (2 lb. 13 oz.)
3 3/4 qt. rolled wheat (2 lb. 13 oz.)
2 1/2 tbsp. vanilla or maple flavoring
3 qt. & 1/2 c. raisins, chopped (5 lb.)

Combine peanut butter and butter. Add nonfat dry milk and mix. Add honey, rolled wheat, vanilla and raisins; mix well. Press dough firmly, about 1/2 inch thick, into two 18 x 24 x 1 inch pans that have been sprinkled with confectioners' sugar. Cut into 2 inch squares. Portion: 2 squares provide 2 tablespoons of peanut butter. Yield: 100 portions.
