CRACKLIN' CORNBREAD 
1 c. self-rising corn meal mix
1/3 c. self-rising flour
1 egg
1/2 to 2/3 c. buttermilk
2 tbsp. oil
2/3 c. cracklings

Preheat oven to 475°F. Grease a 7-inch iron skillet. In medium bowl, combine cornmeal mix, flour, egg, buttermilk (to desired consistency), and oil. Mix well. Stir in the cracklings. Pour the batter into the skillet and bake for about 20 minutes. Remove from pan immediately.
