FRIED CORNBREAD PATTIES 
1 c. self-rising corn meal (white) use more if needed
Salt to taste

Mix with water to desired softness. Spoon into hot oil with tablespoon and brown. Serve, good with butter.

We called it Hot Water Cornbread at my house. The water must be boiling before adding to cornmeal. It takes practice to know exactly how much water to add, can't be too thin -- almost thick enough to hold on a spoon if turned upside down.

We call them hoecakes and yes they are very good with some butter and homemade jam or honey.

I agree, it's hot water cornbread, I had this all my life growing up in Tenn. I now make it for my grown sons and their family.
