SPANISH BAR B QUE PORK | |
1 lb. boneless pork loin 1 c. margarita mix (or 1 c. lime juice, 4 tbsp. sugar and 1/2 tsp. salt) 1 tsp. ground coriander 1 clove garlic, minced 2 tbsp. butter, softened 2 tbsp. lime juice 1/8 tsp. sugar 1 tbsp. minced parsley 1 lg. green pepper 2 ears corn, cut into 8 pieces Combine margarita mix, coriander, and garlic. Place pork in plastic bag, and marinade for 30 minutes. Blend lime juice and butter, sugar, and parsley. Thread pork on skewer, alternate with pepper and corn. Grill 8-10 minutes basting with butter sauce. |
