EGGPLANT AND CORN 
2 med. eggplants, peeled, cooked & drained
1 med. onion, chopped
2 stalks celery, chopped
1/2 stick butter
1 can whole kernel corn, drained
9 saltine crackers
1 egg
1 tbsp. chopped fresh parsley
Pepper to taste
2 or 3 saltine crackers
1/4 stick butter

Mix eggplant, corn, onion and celery (which have been sauteed in butter), 9 broken saltine crackers, egg, parsley. Add pepper to taste. Place in greased casserole and top with remaining saltines (broken) and 1/4 stick butter in pieces. Bake at 350 degrees until heated.
