SQUASH CORN CASSEROLE | |
1/2 c. onion, chopped 1/2 c. green pepper, chopped 2 tbsp. butter 2 c. mashed cooked squash 1 (16 oz.) can cream style corn 1 c. crushed crackers 1/2 c. shredded American cheese 2 tbsp. chopped pimento (optional) 2 tbsp. crushed saltine crackers 1 tsp. butter, melted Cook onions and green peppers in 2 tablespoons of oil until tender. Stir in squash, corn, and 1 cup crushed crackers, cheese and pimento. Put in a 1 1/2 quart casserole. Combine remaining crushed crackers and melted butter. Sprinkle over the casserole. Bake uncovered at 350 degrees for 40-45 minutes. |
