CHUNKY OYSTER CHOWDER 
3 c. milk
3/4 c. heavy cream
6 tbsp. butter
1/4 c. flour
1/2 tsp. salt
Dash fresh pepper
2 tbsp. Worcestershire sauce
1 tbsp. dry sherry
1 qt. fresh oysters, drained and cut up
Oyster liquor from oysters
1 lg. potato
1 lg. onion, finely sliced
1/2 lb. fresh mushrooms, thinly sliced
2 carrots, grated
Paprika (for garnish)

Soften onion in butter. Add oysters and liquor and cook until edges curl. Meanwhile, cook diced potato in a separate pan of boiling, salted water until almost done. Add mixture of milk, cream, flour, salt and carrots to oyster mixture. Stir until thickened some.

Add pepper, Worcestershire sauce, mushrooms and drained potatoes. Cook for 3-5 minutes. Add sherry. Warm and serve sprinkle with paprika. Serves 4-6.
