CORN CASSEROLE 
2 eggs, beaten
1 #2 can cream style corn
1 (8 oz.) sour cream
1 box Jiffy corn muffin mix
1 (2 oz.) jar or to taste, bits of pimento
2/3 c. oil
1 med. onion, chopped
1/2 green pepper, chopped
1/2 c. cheese

Mix all of the ingredients except the cheese. Grease casserole dish. Pour in half of mixture. Spread 1/2 cup cheese over. Top with remaining mixture. Bake at 350 degrees for 1 hour.
