GARDEN EGG STEW/EGGPLANT 
Onions
1 lg. eggplant
Pepper, salt
4 med. tomatoes
Codfish
1 can corn beef
2 c. vegetable oil, or as desired
Fish

Cut eggplant and boil. Slice onions, grind eggplant. Cut up fish if used into pieces, fry the onions and tomatoes in oil. Add pepper and add a little water. Let it boil for 10 minutes and add eggplant. Allow to simmer until cooked, stirring occasionally. Serve hot with boiled potatoes, rice or kenke or aboloo.
