MICROWAVE PEANUT BUTTER FUDGE
1 lb. confectioners sugar
3/4 c. crunchy peanut butter
1/4 c. milk
1/4 c. butter
1 tsp. salt
2 tbsp. Hershey's cocoa (if making chocolate fudge)

Dump all ingredients into oven proof casserole bowl. Microwave on high for 2 minutes; beat with wooden spoon. Pour into buttered dish (8 x 8 inch). Chill.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I got this recipe from a co-worker and also from the show GOOD EATS. It is the best, and never fails.

I had to splash just a tad more milk in this to make it stirable. It came out of the microwave waaaay too thick to even stir! Good luck!

I will add a bit more milk next time, but other than that the result was wonderful. I'd gladly trade some stirring difficulty for watching & waiting for the soft ball stage anytime.

Hi Moon,

Try checking the temperature with an instant thermometer. Remove fudge from microwave first. The temperature should reach 238°F.

I'm with moon, I made the fudge according to the recipe above and it came out of the microwave like soup. I added another pound of powdered sugar and it was OK.

For those of you wondering how much is a pound of powdered sugar....4 cups of unsifted p.sugar makes a pound. Excellent and easy!

So quick and easy! My first time ever making fudge. I had to microwave it for an extra minute, but could be because our microwave is kind of old and small. My husband loves peanut butter and I'm sure he will love this!

Last minute idea - should've thunk it through more, but poured over marshmallows - next time will make graham wafer crust, then mini marshmallows then fudge on top!

I added a teaspoon of vanilla after it was out of the microwave. Very good for being so easy.
