GERMAN POTATO SALAD 
5-6 bacon slices
2 tbsp. flour
1/2 c. sugar
2 tsp. salt
1/8 tsp. pepper
1 egg
1/4 c. vinegar
1 c. water
1/4 c. lemon juice
1 qt. sliced cooked potatoes (6 med.)
1/2 c. diced onion
1/4 c. parsley, use to taste
1 tsp. celery flakes

Fry bacon, drain and crumble over peeled, sliced potatoes. Save bacon fat in skillet, add flour, sugar, salt, pepper and blend well. Beat egg slightly, add vinegar, water and lemon juice. Add gradually to mixture in skillet, cook until thickened, stirring constantly. Add bacon, potatoes, onion, parsley and celery flakes. Mix lightly. Can garnish with lettuce, tomato or cucumber slices.
