GOLDEN STUFFED BAKED POTATOES 
4 baked potatoes
1 c. grated raw carrots
1/4 c. parsley
1/4 c. minced onion or chive
1/2 tsp. horseradish
2/3 c. yogurt or sour cream
1/4 c. melted butter
Salt & pepper to taste
Grated cheddar cheese
Paprika

Halve baked potatoes and scoop out. Blend the scooped out potatoes with carrots, parsley, chives, horseradish, yogurt and butter. Season to taste. Refill potato halves. Top with cheese and paprika. Bake in 350 degree oven for 15 minutes or until cheese melts. You can make filled potatoes ahead and refrigerate. Top with cheese when ready to bake.
