STUFFED BAKED POTATOES | |
12 lg. baking potatoes 2/3 c. butter 2 tsp. salt 1/4 tsp. pepper 1 c. scalded milk 3 eggs 1/4 c. minced chives 1 c. grated Cheddar cheese Oil Scrub potatoes. Rub with oil and bake at 400 degrees for 1 hour or until done. Cut in half. Scoop out pulp. Mash potatoes. Add butter, salt, pepper, scalded milk, eggs, chives and cheese. Whip all together. Put back in potato shells. Wrap potatoes in foil and freeze for later or bake at 425 degrees for 10 minutes if used immediately. To heat wrapped frozen potatoes, bake on cookie sheet at 350 degrees for 1 hour and 15 minutes. |
